Waldorf Skewers with Hot Honey
Waldorf Skewers with Hot Honey

Ingredients
3/4 lb artisanal bleu cheese, room temperature
2 red apples
1 Tbs lemon juice
24-48 black grapes (1 to 2 per skewer)
3 cups arugula leaves
24 (4-inch) skewers
1/2 cup walnut pieces
hot honey, for serving (see note)
Directions
  1. Break the cheese into 24 pieces about 1/2-inch in size. Set aside. Cut each apple into quarters. Remove the cores. Cut each quarter into 4 pieces, and place in a bowl. Toss with the lemon juice. Using a 4-inch skewer, thread the grapes, apples, arugula and cheese onto the skewer. Repeat for remaining skewers. Arrange the skewers on a platter. Scatter the walnut pieces over the skewers. Drizzle with hot honey.

    Note: Make the hot honey by combining 1/2 cup of honey, 2 tablespoons of Sriracha sauce, 2 tablespoons of apple cider vinegar and 1/2 teaspoon of red chile flakes in a small saucepan over medium-low heat. Bring to a simmer. Cook for 1 minute. Let cool completely before using. Hot honey can also be served with cheese or as a glaze on pork.
